for a long time, I have thought myself incapable of making scrambled tofu*. Why yes, this is one of those dishes that are considered bedrock of veganism, up there with pasta with olive oil and vegetables at restaurants. And yet, no matter how I try, my scrambled tofu never seems as fluffy or as tasty as others. This morning though, I said fuck it to the recipes, and threw some tofu in a pan with a bit of red onion and garlic. I added some spices and a bit of hot mustard. And you know what? It was a damn fine breakfast. Did it taste restaurant worthy? No. But was it good with a bit of toast, and black beans and tomatoes**, washed down with black tea and sugar? Yes. Yes it was. And it went even better with the “Kittens Inspired By Kittens!” twee mix I was playing.
If this was the high point of the day, well, at least it was delicious.
*But Courtney, you can cook you say! You used to host veg*n dinners for ten+ people every Sunday! You baked cookies that non-vegans loved! I hang my head in shame and confusion.

I went through a period where I was naming my mixes after YouTube Videos. Anyway, this one is quite good for mornings when you sleep in for the first time in weeks, have some tea (black with no sugar, a bit of soymilk), and make muffins (blueberry) and cupcakes (orange with chocolate ganache).
